Fair Rules
- No Eating or Drinking in the Booth. Sit on the
Outside of the booth if you want to take a break
- There will be cups with names on them. Use these and
not the paper cups please.
- Make sure you have gloves on every time you touch food
- Hair must be covered at all times. Ball caps are OK
- SMILE
- All food must be stored 6" above the ground
- Fridge must stay at 41degrees or colder. If warmer
call the emergency number.
Food
- Order of Biscuits and Gravy is two biscuits split open with
4 ladles of gravy
- An order of pancakes is three pancakes the size of the
bottom of the plate
- Both of these and orders of eggs and sausage go on the
dinner plates
- If they want it to go put a dinner plate on top also
- Individual sandwiches and orders of hash browns are to be
placed on wax paper or a small plate
- Styrofoam boxes should be available but only if they ask
for it. Don't offer as they are costly and cut into the expenses
- A cup of ice is a quarter
- We will have a cooler there if you open a water and don't
finish it put your name on it and place it back in our cooler only not in
the fridge with other food that is against health department rules.
- If you take a box of something out of the fridge, then take
one out of the freezer and put in the fridge
- COUNT CASH DROPS!
- Keep count of all food eaten by volunteers and food that is
thrown away.
Opening Duties
- Wipe Down Serving Counters
- Fold Tarp
- Set up table and chairs
- Reset Condiments, fill as necessary
- Mix pancake batter
- Make sure ice and cups are stocked
- Ice down bottled water
- Start cooking Sausage, Gravy, Biscuits, and Eggs
Throughout The Day
- Keep counters and serving area wiped down
- Keep garbage cans emptied
- Keep water iced down
- Keep up with inventory, Communicate
- Sweep inside and outside of booth
- Keep condiments stocked
- Check change, buy more if necessary. (This is done at
the fair office in the front of the fairground. Adults need to be
responsible for this!)
Closing Duties
- Turn off griddle, clean & cover with foil
- Empty grease catch on both griddles - don't need to scour,
pour grease in a box in dumpster
- Clean all serving pans used
- Turn off oven
- Sweep inside and outside of booth
- Emptied garbage cans
- Fold up table and chairs, place in booth
- Collect all condiments, and napkins, put away
- Turn off coffee maker, clean pot
- Turn off fans
- Place water in refrigerator
- Cover soda dispenser/Table with tarp
- Lock up money, if applicable
- Lock refrigerators
- Turn off lights on pole by electric panel
